There are many wine drinkers who are lyrical about these wines. Within Burgundy, the Chablis is without a doubt the most popular wine. The wine-food combination with crustaceans and shellfish are usually perfect to which the wine owes its nickname “Oyster Water”. The Chablis vineyards are located in the northernmost part of Burgundy where the Chardonnay is planted the most. Chardonnay is a strong grape variety that is not very sensitive to the cold.
Vineyards
The best vineyards are located north of the town of Chablis. Chablis has four appellations that are assessed from low to high. AOP Petit Chablis is the simplest appellation. The vineyards are just outside Chablis and give simple wines with a less characteristic taste. The best wines come from AOP Chablis Grand Cru, including the famous names such as Les Clos, Vaudésir, les Grenouilles and Blanchots.
Food and drink
White dry wines come from Chablis. That is why the wines from Chablis are almost always a very good companion for crustaceans and shellfish.
