White grape with a high sugar content that occurs to a greater or lesser extent throughout Spain
especially in Cordoba (68%), Badajoz, Málaga and Valencia. An important grape in the D.O.’s Jerez, Málaga, Montilla-Moriles and Valencia. In Spanish viticulture, the grape after Palomino is the most important grape for sweet Sherry. Pedro Ximénez is also used for Málaga wine. In recent years, more and more dry, white wines have been produced from this grape. Total area of Pedro Ximénez vineyards: 26,875ha.
